Red Lentil Curry

Method

  1. Finely dice onions, peppers, and garlic.
  2. Sautee in a pan.
  3. Add spices, sautee one minute more.
  4. Add lentils, tomato purée, and bouillon
  5. Cook until lentils are soft. Gradually add water as you go.
  6. Add coconut milk and spinach.
  7. Give it five more minutes, and it's ready to serve.
