Ingredients
- 2 red onions
- 5 cloves of garlic
- 1 cup (200ml) lentils
- 1 can (400g) tomato purée
- 150-300g spinach
- Two poblano peppers
- One box light coconut mjölk
- 1 tbsp curry powder
- 1 tsp turmeric
- 1 tsp cumin
- 1/2 tsp cinnamon
- 1/4 tsp allspice (maustepippuri or kryddpeppar)
- 1 chicken bouillon cube
Method
- Finely dice onions, peppers, and garlic.
- Sautee in a pan.
- Add spices, sautee one minute more.
- Add lentils, tomato purée, and bouillon
- Cook until lentils are soft. Gradually add water as you go.
- Add coconut milk and spinach.
- Give it five more minutes, and it's ready to serve.
